Brian started his career in the restaurant industry in 1987 as a dishwasher at Marty’s Restaurant. Working there 8 years, he moved through various positions like line cook, cashier, bartender, manager, and General Manager (2 yrs). Brian then left Marty’s in 1995 to work for a much larger company that owned Lone Star Steakhouse & Saloon on Guam. Brian joined the Lone Star team as a restaurant manager and within a year was promoted to General Manager. Over time, Brian was promoted to Vice President of the company which also included Taco Bell and Sizzler. In 2002, Brian formed his own company, Pacific Dining LLC and purchased Lone Star from the original owners.

Jimmy Untalan – General Manager

Jimmy started his restaurant career as a host staff member at Sizzler restaurant in 1998. By 2000, Jimmy had moved through the service ranks and was promoted to a Key Employee, helping with Management duties. By the end of that year, Jimmy was promoted to restaurant manager. When Sizzler was sold in 2001, Brian recruited Jimmy to Lone Star. No management positions where available so Jimmy split time as a bartender and Key Employee until a management position opened up. Jimmy was promoted to a manager in 2002 and today is the GM.

Clarence ( Clay ) Elicio – Manager

Clay began his career at Lone Star as a dishwasher in 1997. By the end of 1998 Clay had moved through all the kitchen line positions and was now a broiler and kitchen supervisor. In 2000 Clay was promoted to a Restaurant Manager position, now supervising both service and kitchen staff. In 2003 Clay, who is also a member of the Army National Guard, decided to step down to a Key Employee/server position to allow for a new manager to be trained as he prepared to be deployed to Africa during “Operation Enduring Freedom”. In April of 2004, Clay was deployed and served his duty in Africa for the next 18 months. After his return to Guam in 2005 Clay continued his Key Employee position at Lone Star, splitting time with Guard duty. In April of 2007, Clay was once again promoted to a manager position.

Dickenson ( DJ ) Ezra – Assistant KM / Service MIT

D.J. spent most of the late 80’s and early 90’s working his way up the kitchen ladder at Sizzler Restaurant. In 1998 D.J. took on a dual role at Sizzler and became a Service Supervisor/Key Employee in addition to his Kitchen Supervisor position. In 2000 D.J. was promoted to a Manager position. When Sizzler was sold in 2001, D.J. joined the Lone Star team as a line cook then moved up to a Key Employee role in 2002. D.J. left Lone Star in 2003 to work as a Kitchen Manager for Taco Bell. In 2005 he returned to our company and took on dulties as a Kitchen Supervisor until he was promoted to an Assistant KM position in August of 2007. Today D.J. is still the Assistant KM but is also once again taking on the challenge of a dual role and is an MIT for service operations.
